– All right, check it out guys, it’s Trevor James we just got into Kaifeng, China and today this is a street food city and we’re bringing you for a full-on extreme street food adventure Let’s check it out (mellow music) And in today’s video, we are meeting up with a local food blogger in Kaifeng who’s bringing us for a ton of extreme street food And to finish up, since we’re on a world noodle tour, we are gonna have the local Kaifeng Hui Mian Let’s go check it out This is it, Kaifeng, China A famous food city in China with some of the most packed streets full of street food And today we’re meeting up with our buddy Dalei who’s taking us for five extreme street foods in Kaifeng So make sure to watch all the way until the end, ’cause you’re gonna love the food in this video Oh, we’re having the lamb intestines soup for breakfast (speaking in foreign language) It’s gonna be good Okay! (speaks in foreign language) Let’s try it out Oh my goodness Look at this, wow, mixed lamb intestines and organs, and there’s also a big bowl of testicles here (speaks in foreign language) And you can see we’re just chopping up all of these organs (speaks in foreign language) That’s definitely the testicle right there going right into that stock, boiling them up I’m surprised for a big wok of organs, it smells delicious (speaks in foreign language) And they just boil them right up in there, so we got the testicle, (speaks in foreign language) Wow (speaks in foreign language) So many organs and testicles This is the first meal of the day (speaks in foreign language) Oh, man (speaks in foreign language) Let’s go try it out (speaks in foreign language) That is the lamb testicle And then the intestine, first bite of food in the day (speaks in foreign language) Mmmm! (speaks in foreign language) Wow, that Yangdan is creamy It’s like milky in a way, and almost tastes just like chicken with a bit of lamb aroma to it (both slurping) Mmmm There’s still a big chunk of testicle in there Let’s try a little bit of the intestine (laughing) So many organs in here (speaks in foreign language) Mmmm! (speaks in foreign language) Wow, everybody loves this (speaks in foreign language) Take a big bite of Rou (speaks in foreign language) Mm, (speaks in foreign language) Wow, that organ mixture and testicle mixture It’s all very soft and squishy, and there’s not a super strong organ flavor, very nice (speaks in foreign language) Mmmm! It’s smooth, it’s not peppery at all It’s just a pure lamb organ flavor And it’s really all about that soup stock It’s definitely fatty and rich, and creamy in a way Full of these organs, wow (speaks in foreign language) Ohh! That’s a lot of fish from the small rivers in the area (speaks in foreign language) Whoa, look at all these spices we’re adding in here, star anise, cinnamon, fried eggplant (speaks in foreign language) Okay, start the day off strong There it is, the fried fish, Huangmenyu Fried fish in, you can smell the spices (speaks in foreign language) you got the star anise, fried eggplant, and that stock smells so, whole of spices (speaks in foreign language) And here it is! The delicious and aromatic (speaks in foreign language) Okay, so fried eggplant, (speaks in foreign language) The small river fish, right from local, (speaks in foreign language) local river fish, (speaks in foreign language) Mm (speaks in foreign language) Okay, (speaks in foreign language) Okay, (speaks in foreign language) So this is for the good buddies I’m just gonna try with the fish egg and fried fish (speaks in foreign language) Mmmm, that’s what it’s all about This five spice mixture with cinnamon, Mmmm! (speaks in foreign language) Mmmm, and the fish, they’ve got a little bit of a crunchiness from the bones (speaks in foreign language) And I love that stock It’s full of spice, the star anise, the cinnamon, (speaks in foreign language) Mmmm That is amazing, the eggplant, the fish, the Xiaoci give it a little bit of Kougan, everything is really nice Mm, with the cilantro, (speaks in foreign language) Keep going (speaks in foreign language) Wow, and he’s such a character (speaks in foreign language) Okay, whoa, (speaks in foreign language) we’re gonna get a whole lamb head, and here we are

All this crazy stuff for breakfast (speaks in foreign language) Wow, only lamb head store This is amazing, we’re just having most full-on food for breakfast (speaks in foreign language) (laughing) (speaks in foreign language) Buy one and eat it, Okay! And this is where it all starts (speaks in foreign language) Wow, we’ve got a bucket of lamb heads (speaks in foreign language) Ooh! (speaks in foreign language) so they burn the hair, (speaks in foreign language) We’re just cleaning it off a bucket of lamb heads (speaks in foreign language) So we’re gonna boil it in a Da Guo, and (speaks in foreign language) Okay Ooh! Wow! And there it is (speaks in foreign language) So this one is cleaned off, so we’re gonna boil it and you can really eat everything (speaks in foreign language) Oh, there’s another one (speaks in foreign language) Wow! I can’t believe it Whoo, (speaks in foreign language) The brain (speaks in foreign language) The eyes (speaks in foreign language) The tongue (speaks in foreign language) The skin (speaks in foreign language) Wow, everything except the bones Wow, we’re just about to finish these up, and then (speaks in foreign language) and then we’re gonna boil them That’s the finish product right there (speaks in foreign language) So that can go right in, ready to go Here we go! (speaks in foreign language) Putting them in Wow, (speaks in foreign language) So this pot is just full of Xiangliao, over fifteen types of Xiangliao, we’re just gonna mix it up, oooh, that bag right there is full of Chinese spices and herbs, and that’s what’s giving it the aroma Ooh, (speaks in foreign language) Whoa! (speaks in foreign language) so this is what gets the flavor in there, so we’re boiling it up (speaks in foreign language) Just full of lamb head, (speaks in foreign language) The lungs (speaks in foreign language) The heart (speaks in foreign language) The stomach You can really smell it, it has almost like gingery, cinnamon, star anise flavor The smell is really good, actually This bag, how it looks on camera, it’s really smelling aromatic, lamb and Xiangliao all mixed up Ooh, we’re just pulling them out one by one, and we’re gonna eat it Wow, that is crazy And there it is (speaks in foreign language) Okay, (speaks in foreign language) We got a lamb head for breakfast Separate the meat and the skin (Ax banging) We’re just breaking into with an ax This is extreme (speaks in foreign language) There it is (speaks in foreign language) in the morning (speaks in foreign language) Looks really good Wow, how should we eat this? (speaks in foreign language) Mmmm! Wow! (speaks in foreign language) That is delicious! The lamb cheek skin, the cheek is so fatty, and it’s actually seasoned quite well, pretty salty, but there’s also lots of Wuxiang in there (speaks in foreign language) That’s the eyeball (speaks in foreign language) This is pushing the boundary here for me a bit, I got to be honest (speaks in foreign language) Okay (speaks in foreign language) Mmmm!

Mmmm! That eyeball is actually like a little fat explosion, I can’t say it has a particular flavor, but (speaks in foreign language) it was good! (speaks in foreign language) Okay, Oh, the cartilage, there it is (speaks in foreign language) The cartilage, okay (speaks in foreign language) Mmmm, it’s like a squid, a crispy squid, salty Mmmm, wow, (speaks in foreign language) Oh, wow, look at all this stuff inside That’s crazy! Dalei is just getting some chopsticks to pull the brain out, and they are chopping and getting the brain out as we speak This is extreme, I gotta be honest, but it’s delicious! You can’t judge it, unless you try it Whoa! (speaks in foreign language) Okay, we’re gonna get the brain out Oh, there it is, Oh my God, this is crazy! Wow! To be honest, that looks extreme I am not sure We had everything so far, we had the eyes and the cheek, the skin was delicious, but the brain, (speaks in foreign language) Mmmm! (Dalei laughing) Ooh! (speaks in foreign language) It’s creamy, it’s soft, and it’s got that Wuxiang flavor as well, ’cause it’s all stewed in the same spice mix, is definitely fatty and heavy, and by now I’ve had a lot of brain all over the world, and this is probably one of the best, because it’s in the Wuxiang And that is surprisingly a delicious brain, and there’s still a little in there, so we’re just gonna scoop it out Mmmm! It’s creamy Mmmm! That is amazing I’m 100% honest here, that is delicious (speaks in foreign language) Wow, yes it is (speaks in foreign language) And to be completely honest with you guys, this is actually pretty good It’s very flavorful with the Wuxiang, the spices, the Xiangliao, they put in there, and it’s fatty, that is some of the softest meat I’ve ever eaten (speaks in foreign language) And here we are, we’re going for extreme street food all day (speaks in foreign language) Chicken blood soup (speaks in foreign language) Traditional, (speaks in foreign language) Traditional Kaifeng soup (speaks in foreign language) Here it is (speaks in foreign language) Look at all the chicken blood cubes, and then over here, (speaks in foreign language) the heart, liver, and then there is an egg that haven’t come out from the chicken yet, and they go right in the pot there, Wow! What a mixture of organs! All chicken organs (speaks in foreign language) Wow, pepper and then the stock, that is gotta be the richest stock, pure chicken organ stock Whoa! That is unreal (speaks in foreign language) and here it is, (speaks in foreign language) Wow, look at that, it’s looking so complex (speaks in foreign language) The stomach and (speaks in foreign language) The heart, and it smells fantastic, really, really nice (speaks in foreign language) Mmmm! Mmmm! Peppery (speaks in foreign language) That is unreal, guys, the blood, it has a springiness to it, a soft, very nice texture, actually the flavor, I think it just gives the stock a bit of a rich complexity, there’s not an iron-like blood flavor that you normally expect in blood, and then all the organs, (speaks in foreign language) Mmmm! Whoa! That is all about the stock, it is so complex, it’s so aromatic That stock is like a chicken stock times a hundred because of the organs and the intestines, the blood, the egg, it’s all in there There’s a lot of texture, a lot of springiness (speaks in foreign language) No exaggeration, this is definitely the best chicken soup I’ve ever had (speaks in foreign language) Wow, it is so complex and peppery with the cilantro, and the blood and the eggs (speaks in foreign language) And not only is there the soup but there’s the bing as well (speaks in foreign language) Wow, it starts right here That’s the peppery, Jiang (speaks in foreign language) Ooh, you can see we’re just placing them

on this circular oven, it’s got sesame, salt (speaks in foreign language) Oh, we’re gonna get one, to go with the chicken blood soup You can really smell that Huajiao, peppercorn, and all of the Xiangliao they put in this bing I’ve never smelled the bing like this before Okay, and here it is Whoa, that is the most aromatic bing I’ve ever smell, you can smell the sesame and Huajiao, peppercorn, all of the Wuxiang, five spices, this is the five spicity We’re gonna try it out, and here it is, the Wuxiangbing (speaks in foreign language) Whoa, (speaks in foreign language) Look at that, and you can see the awesome Wuxiang paste they put in there (speaks in foreign language) Mmmm! Oh, that right there may just be one of the best bing I’ve ever had It’s salty (speaks in foreign language) the five spice, a little bit of a floral kick from the peppercorn and cinnamon and star anise Mmmm, wow (speaks in foreign language) And next stop, Dalei is bringing us, for the reason we came to Henan, the dish we wanted to try on our noodle tour, (speaks in foreign language) Special Henan, (speaks in foreign language) And this is a noodle of the world here, Henan Huimian, and it’s all starting now We’re pulling those noodle strips out, throwing them in the lamb stock which all comes from right here, a rich lamb stock, fatty lamb stock We’re throwing in some veg, and then we’re gonna mix it up with sesame paste Look at this, guys, putting in that sesame paste Ooh, look at that sesame paste, little MSG for the flavor, and then we’re gonna add in that stock Oh, here it is, just adding in a little bit of the fat from the top of the lamb, Whoa! And then we’re adding in more stock, and here come the noodles, super unique, guys Wow, seaweed lamb stock mixture going on top of a sesame lamb fat, unreal, and then adding a little Rou Whoa, there it is! That is a delicious looking bowl (speaks in foreign language) Wow, there’s so much here So we’ve got gluten over top of Baicai, pork meatballs, coriander and lamb, stewed Tofu (speaks in foreign language) Okay, so have all of these Cai with Huimian, (speaks in foreign language) Wow, look at this, this looks so unique, has sesame paste, it’s got seaweed, it’s got cabbage, it’s got fentiao, vermicelli, and these hand-pulled noodles with (speaks in foreign language) and lamb on top in a rich (speaks in foreign language) It’s all about that sesame paste in there, guys, we got sesame and lamb stock mix together (speaks in foreign language) (slurping) Mmmm! Whoa! Mmmm! That is what it’s about The lamb stock is rich, definitely fatty, with the sesame paste and with Qingcai, it gives it a freshness, so there’s a little bit of freshness with (speaks in foreign language) Amazing food This is amazing, just local, right on the street Lamb, noodles, full-on (speaks in foreign language) and just like Dalei said, it’s (speaks in foreign language) and that is a complex flavor, lamb stock with (speaks in foreign language) the seaweed, the lamb stock which is fatty and, (speaks in foreign language) Very good!
